Garlic Scapes
one bunch Garlic scapes are the delicious byproduct we gather from our garlic beds in early summer. The scapes are long, spiraling tendrils that shoot out of the plant, containing the flowering seed head. We snip them off to encourage the plants to invest their energy in the bulbs instead, and the result is baskets and baskets full of garlicky goodness. Use them as you would use scallions, raw or cooked, even pickled, and enjoy their smooth garlic flavor. They are incredible in your favorite pesto recipe. They only come once per season, so get them while you can!
